How My Egg Fast Went

I was excited to start my egg fast this morning. I like eggs, although I wasn’t sure about an entire day of them! I started my day with 2 fried eggs cooked in a bit of butter topped with 2 TB cream cheese, and everything bagel seasoning. It was really good! Everything bagel seasoning makes everything taste great! I was super full after that so I forgot to eat my cheese for a snack.


For lunch, I had egg salad with 2 hardboiled eggs, 2 TB mayo, everything bagel seasoning (because why not), a bit of ground mustard, and a cut up cheese stick. My cat was drawn to my egg salad as if it were served over a bed of catnip. I have no idea why, but I ended up eating the egg salad standing up at my kitchen island because he wouldn’t leave me alone.

I felt a little rough after lunch. Just tired and a bit weak. I had a cheese stick with olive oil, salt, and pepper as a snack and then a wedge of brie a bit later. That helped a bit. I made some bulletproof coffee with Kerrygold butter and coconut oil to get me to dinner.

Dinner was the one I was most excited for. I made cream cheese egg pancakes. They looked ugly, but they tasted great. I topped them with butter and Walden Farms no calorie, no carb syrup. Super yummy and didn’t even feel like I was eating eggs….again.

To make the pancakes, I put 2 eggs and 2 TB cream cheese in a bullet blender and mixed together. I heated up 1 TB butter in a pan and poured the batter on top. I cooked one side and then attempted to flip it over nicely but you can see how my attempt went! I finished cooking it and served with 1 TB butter and the syrup.


I don’t think I’ll do this again tomorrow. I like all of these egg meals independently, but having them all in one day was rough. I don’t know how people do 3 or even 5 days of this! I’ve had a bit of a headache all day and I blame the egg fast!

We’ll see what the scale says tomorrow, but the thing I like about keto is that I don’t feel hungry and I don’t feel like I’m on some wacky diet. While I wasn’t super hungry (probably because of all the fat I’m eating), I actually was craving vegetables all day. I’m going to try and go the full day just doing the egg fast as planned for the sake of being able to report on it, but I’m definitely jonesing for some veggies.

Grocery list for the day:

  • 6 eggs (4 fresh and 2 hardboiled)

  • 4 TB cream cheese (2 with breakfast, 2 for dinner)

  • 2 cheese sticks (1 in egg salad, 1 as snack)

  • 2 small wedges brie (snack)

  • 2 TB mayo (in egg salad)

  • 1 TB olive oil (with cheese stick snack)

  • 4 TB butter (2 with breakfast, 2 with dinner)

  • everything bagel seasoning (with breakfast and lunch)

  • salt and pepper

  • ground mustard (in egg salad)

All the meals I made today were great and I plan to eat them again as part of my normal keto diet, just maybe not all at once! This was a super easy day of eating since I always knew what I was going to eat and all the meals were easy to make. This could be beneficial for someone starting out who doesn’t want to think about what to eat.

Doing an Egg Fast This Weekend


In all my years of doing low carb, keto, paleo, etc., I’ve never done an egg fast. An egg fast is a short-term eating plan that involves eating eggs, cheese, and butter. Many egg fasts go from 3-5 days. I’ll just be doing a quickie over the weekend to see how it goes.

Egg fasts are often used to break weight loss plateaus. I’ve been hovering around 189-191, thanks to several vacations. I got as low as 185 pounds around my birthday in July, but I had two vacations where I didn’t stick to keto and gained a few pounds back so it’s time to get serious and get out of the 180s.

The Egg Fast Rules:

Whole eggs — yolks and whites — are the main source of fat and protein.

1 tablespoon of butter or healthy fat per egg consumed.

Eat a whole egg within 30 minutes of waking up.

Eat an egg-based meal every three to five hours.

Eat a meal even if you’re not hungry.

You can eat up to 1 ounce of full-fat cheese per egg consumed.

Eat at least six whole eggs per day.

Stop eating three hours before bedtime.

You can drink up to three cans of diet soda per day but aim for one or less.

Day One

  • Breakfast: an egg-cheese omelet made with 2–3 eggs, cooked in 2–3 tablespoons of butter with Chipotle Tabasco

  • Snack: 1 stick of string cheese

  • Lunch: 2–3 deviled eggs

  • Snack: 2 ounces brie

  • Dinner: cream cheese pancake — 2 eggs and 2 tablespoons of cream cheese blended until smooth and cooked on a pan or griddle with 3 tablespoons of butter and sugar free, zero calorie syrup

Day Two

  • Breakfast: cream cheese pancake — 2 eggs and 2 tablespoons of cream cheese blended until smooth and cooked on a pan or griddle with 3 tablespoons of butter and sugar free, zero calorie syrup

  • Snack: 1 cheese stick

  • Lunch: egg salad — 2 eggs and 2 tablespoons of mayonnaise with 1 ounce cheese microwaved until crispy to make a cheese cracker

  • Snack: 1 ounce brie

  • Dinner: 2 eggs fried in 2 tablespoons of butter with cheese and Chipotle Tabasco

The Perfect TGIF Keto Dinner!


When I was growing up, Fridays were pizza nights. My dad would order Pizza Hut (literally the only pizza he seemed to like) and we would sit around the table eating pizza and talking about our day. My parents were both PE teachers so they always had really funny stories and to this day, pizza on Friday reminds me of growing up.

Pizza on low carb/keto for me has always meant either sauce, cheese, and pepperonis on an omelette or in a portobello mushroom cap. I’ve never tried making the Fathead pizza dough. Because of my almond allergy, I don’t use almond flour and I haven’t found the need to buy coconut flour just yet. The omelettes and mushrooms were okay, but it’s just not the same, you know?

You can imagine my delight when I had Quest pizza for the first time. I was skeptical due to the higher carb count but the fiber count is also high making the net carbs really reasonable (only around 6g net carbs for half of the pizza. Even doubling that net carb count by eating the whole thing is still well within a 20g carb allowance. I usually try to keep 1-2 of the Quest pizzas in my freezer for those times when I need a quick keto-friendly meal.

Getting to eat my Friday pizza makes me feel like I’m not dieting and it’s super satisfying because it tastes like regular pizza. Quest has worked a miracle. Next on my “to try” list is the Quest loaded taco protein chips!

I’m about to embark on an egg fast this weekend so I had to squeeze in one good, non-egg meal tonight!

Recipe: Buffalo Chicken Salad with Blue Cheese Dressing

I love buffalo chicken wings so a salad inspired by that? I’m all in! This comes together super fast - even faster if you use precooked rotisserie chicken. I poached and shredded chicken breasts and that was the hardest part of this whole recipe. If you can boil water, you can poach chicken!

I did take some time to google the best way to poach chicken because I’ve done it before and had mixed results. I don’t usually like poached chicken unless it’s being used as a base for chicken salad or something else. This turned out pretty great and I was actually looking forward to coming home tonight to eat it again for dinner!

  • 3 Chicken Breasts, poached or otherwise cooked and shredded

  • Water or chicken stock

  • Salt and other herbs for poaching

  • 1/4 cup buffalo wing sauce

  • 2 TB butter

  • Lettuce

  • Celery

  • Blue cheese dressing

If you are going to poach the chicken (instead of using precooked chicken): Put chicken breasts in a pot and cover with water or chicken stock to about an inch over the chicken. Add some salt and any additional seasonings you want to the water. You don’t have to add any herbs or use chicken stock but it may give more flavor. Since this chicken is just going to be covered in wing sauce, I skipped the seasonings besides salt. Turn the heat onto medium and wait for it to come to a low boil. When it starts to boil, reduce hit and let cook the rest of the way for approximately 15 minutes or until chicken is cooked through. Remove breasts from pot and let rest and cool on a plate for a bit. Shred the chicken with your fingers or two forks.

In a saucepan, melt the butter and add the wing sauce and stir to combine. Add the shredded chicken and combine so all chicken is coated in wing sauce.

Serve over top lettuce and celery and top with Blue Cheese Dressing. I forgot the celery when I made mine * facepalm * but this was still super tasty!

Quick Keto Lunch Ideas

I’m always looking for quick lunch ideas that don’t require a lot of prep and are easy to transport to work. This pre-made chef salad from my local grocery store has plenty of turkey, ham, cheese, eggs, and veggies and even comes with a dressing packet. Here’s some other quick ideas..

  • Tuna or chicken salad with veggies or lettuce

  • Roasted or grilled chicken with roasted veggies and dip

  • Bacon, hardboiled eggs, and lettuce or veggies with dressing or guac

  • Turkey or chicken sausage with cooked or raw veggies and dip

  • Pepperoni, salami or other meat with string cheese and tomatoes

  • Cobb salad

  • Caesar salad with chicken (minus the croutons - use parmesan crisps instead)

  • Bunless burger with cheese and your choice of toppings (pickles, onions, mayo, mustard, guac)

  • Steak, pork, or chicken bowl with cauliflower rice, cheese, salsa, sour cream, cheese, guac

Find Your Go-To Fast Food Keto Meals So You Always Know What To Eat

We’ve all been there. You’re out running errand after errand, running from place to place, and next thing you know, you need food NOW. This could be a recipe for disaster if you haven’t planned out some Keto-friendly options ahead of time.

I make sure I know what I can eat at every shopping center I go to so that I’m never stuck without food. At any of the popular “burger” joints, you can get a burger and just toss the bun. If they have grilled chicken, that works, too. Watch the breaded or “crispy” chicken as it will probably contain lots of carbs in the breading. Some fast food restaurants have pretty good salads. Again, choose grilled chicken if that’s an option.

Subway’s are everywhere and you can do what I do and get a salad instead of a sub! I get the regular salad (not chopped because that takes too long). I get the tuna, but you could get almost any of the other meat options like steak or roasted chicken. Add whatever veggies and toppings you like. I just get oil and vinegar with the tuna since the tuna already has mayo in it, but you can add a dressing - just check that it’s not full of carbs.

At Chipotle, a burrito bowl is my go-to. I get it without beans or rice. I load up on the fajita peppers, salsa, cheese, lettuce, and sour cream or guacamole. If you are at another Mexican restaurant, get the fajitas and just skip the tortilla wrappers or get a taco salad, but don’t eat the shell if it comes in one.

Noodles and Company now has several Zoodle options and you can get any of their regular noodle dishes with Zoodles instead. If you’re ordering Chinese takeout, just skip the rice and stick to meat and vegetables. Some places will even let you get sauce on the side or offer a steamed version. Pizza is harder but in a pinch, just eat the toppings! When all else fails, just pick meat or seafood and vegetables - this works for almost any restaurant of any kind.

If I’m worried there won’t be options I can eat, I toss a low carb, ready to drink protein shake in my bag so I’ve got something to hold me over until I can eat a real meal.

Now that you’ve got your plan, you can shop with ease, knowing you won’t be tempted by chips or fries from the food court!

Review: Epic Artisanal Pork Rinds - Sea Salt and Pepper


I have a confession to make. I used to hate pork rinds. Back in my old low carb days, I tried them and almost gagged. I hated them. I hated the smell, the texture, the taste…all of it. When I started Keto, I decided to give them a try again. I got a different brand and started with pork rind nachos, figuring if they were covered in cheese and salt, I wouldn’t notice the taste.

The Smithfield Farms ones I got from my grocery store actually weren’t bad. Either pork rind technology had changed since 10 years ago or I just got a better brand. I still wouldn’t binge on them, but with salsa, cheese, and sometimes guac, they were pretty tasty.

Enter Epic Artisanal Pork Rinds. I saw them on sale at the grocery store and picked up the sea salt and pepper flavor and the chile and lime flavor figuring I should expand my pork rind horizons. I popped open the sea salt and pepper ones and gave them a cautious taste. Holy cow (or should I say pig?)! These are incredible. The flavor was amazing. They had a nice crunch. It was almost like eating potato chips. I was in shock. I was actually eating pork rinds without smothering them in cheese! They are made with “organic, non-gmo, pastured, and pork raised without antibiotics combined with simple seasonings” and I think that makes the difference.

I’m really hooked on these now. The sea salt and pepper is definitely my favorite of the two I got, but I got some queso and I’m going to try some pork rind nachos with the chile and lime…but the great thing is I don’t NEED to. I have eaten those on their own and they are just as good plain.

Bored with Your Chipotle Bowl? Try the Chipotle Tabasco Sauce


I eat a LOT of Chipotle bowls. They take the guesswork out of what to eat because it’s so easy to just grab one on the way home from work. My go-to bowl is usually:

  • No rice or beans

  • Fajita Peppers

  • Chicken or Carnitas (Steak or Barbacoa when I get bored of those)

  • Tomato salsa

  • Medium salsa

  • Corn salsa (sometimes)

  • Sour cream or guacamole (I pick one or the other - not both!)

  • Cheese

  • Lettuce

Even with choosing different meats or sour cream one day and guac the next, I had gotten in a bit of a rut with my Chipotle bowls. One day, I was getting my fork and napkins and I noticed all the Tabascos lined up with to-go cups. I like Tabasco, but never got it at Chipotle. I saw a Chipotle Tabasco (the pepper, not the restaurant itself), which I didn’t even know was a thing. Guess what? I loved it! It gave my bowl a different flavor and it was like eating a brand new bowl. It’s got a smoky flavor and a medium level of heat. I may have to stock up on my next grocery store trip.

A Beautiful Bunless Bacon Burger


I have been having soup for almost a week and I’m a bit over it! My cold is hopefully on the way out although my appetite is just not quite there yet. I was craving a burger last night, but was too lazy to go get it so when I was still sort of craving it to day, it was meant to be!

I have not really been doing keto since I got home from NYC, but I’ve also barely been eating (besides soup) so I’m now at 188.2 pounds - back to my pre-vacation weight. I was a bit lower a week or so before I went on vacation, but poofed up while PMSing so I feel like I’m back to where I was before NYC. With nothing planned yet until the end of September, I’m going to try and knock out as much of this weight as I can before my next trip.

The burger is a Bacon Whopper with Cheese from Burger King minus the bun. It’s super filling and usually really good. I don’t know what it is about my local Burger King, but their food usually looks really good (for a fast food place). I worked at a Burger King in high school so I know the struggle. I also had some sugar snap peas with buttermilk ranch dressing. I’ve been sort of not in the mood for vegetables lately, but the sugar snap peas are getting me through my vegetable funk. I normally love salads and veggies, but I think the cold has turned me off of a lot of food at the moment.

I’m sort of antsy to get this weight loss done. I know it’s a process and I’ll get there, but it’s frustrating how long it takes (in comparison to how easy it seemed to put it on). I’m about 10 pounds away from my “former fat weight” so that will be a bit of a milestone for me. I swore I would never go over that weight, but shit happens. I’ve stopped beating myself up over it and just do what I need to do to get where I need to be.

Review: Jo Malone Peony and Blush Suede

Y’all asked me to review Jo Malone so here’s the first of the samples I got. Peony and Blush Suede is a floral perfume. This perfume has notes of peony, red apple, jasmine, carnation, rose, and suede. On me, I smelled a pleasant floral smell (the peony, I think) with a hint of apple and rose. It is a nice, inoffensive floral that wears soft. It has a green, cleanish, natural scent that makes it seem best for daytime or wear around the office.

I was surprised I liked this because I do not usually do florals. Most are too strong or give me a headache but this was just very nice and pleasant. It’s not going to convert me to a floral wearer, but I didn’t mind the perfume at all.

Review: Prada Candy Gloss

So, embarrassingly, I thought I had Prada Candy, but I apparently had Prada Candy Gloss! So, that’s what I’m reviewing. I probably do have a sample of Prada Candy somewhere in the house so I’ll try to do that one soon!

Prada Candy Gloss has cherry. almond, vanilla, peach, musk, and rose notes. It smells a lot like Cherry Almond at first (much like Jergens lotion), but eventually smells more like a Sweet Tart candy mixed with powder. It’s a very pleasant scent and smells a bit clean and fresh - not just a sweet candy scent. I don’t think this will replace my Holy Grail scents, but it’s nice enough that I’ll give it some more wear and see how it does with longevity. I washed my arm after this review and I can still faintly smell it there so it seems to last a bit!

I'm Obsessed with These Fringe Hem Jeans

I have become obsessed with Sofia Vergara fringed hem jeans from Walmart. These jeans keep popping up on various blogs and sites that I read so I’ve been on the hunt for these for awhile. They never seem to be in stock. They’re on pre-order from Walmart right now and I’m contemplating it, but I’m wondering what size I’ll be in a month when they actually ship! I need my crystal ball.

Fans of the jeans like the stylish look that can be dressed up or down although several commenters said they run small (so maybe I’d get the 14s, which is my current size now). The jeans are stretchy and also come in white (I’m way to messy for white jeans - I spill things too much!). A few other companies make fringe hem jeans, but I really like how these have a slanted fringe.

Find Your Spirit Animal

In certain spiritual traditions or cultures, a spirit animal is a spirit which helps guide or protect a person on a journey and whose characteristics that person shares or embodies. Think Harry Potter’s Patronus. Although I have many animals which I admire (some enough to get tattooed on my body including a snake and a wolf plus a few that represent other people - a dragonfly, a moth, and a bee), I’ve always identified most with the unicorn -a bit solitary, mysterious, elusive, intuitive. I’m a bit quirky and try to forge my own path.

I recently came across the unicorn doll abovev and I never thought I’d identify most with a glitter slime pooping unicorn though! Just look at her - she’s fabulous! The hair! The tattoos! The Don’t Stop Believing shirt! It me! She’s out there living her best life (and pooping glitter slime) and that’s something I aspire to (minus the glitter slime poop although that’s probably an improvement). She a good reminder to be myself and not worry about trying to follow the herd. That’s something I often struggle with - the need to do what I think I should be doing rather than what I really want to do.

I'm Currently Living on Panera Broccoli Chedder Soup + A Preview of Things I'm Working On


Since I caught that cold in NYC, I haven’t had much of an appetite for things. I’ve basically been living on Panera at Home Broccoli Cheddar Soup, which you can find in grocery stores and Target. My plan was to get back on Keto as soon as I got back from NYC, but with the cold, I’ve sort of said, F it, and have been just eating whatever I’m in the mood for - which hasn’t been much. The soup has 15 g net carbs per serving and I’ve been eating it probably twice a day. With bacon and eggs for breakfast and a protein shake mid-day, I’ve actually managed to lose all my vacation weight without really trying (probably from reduced calories more than anything).

I’m drinking tons of lemonade Sparkling Ice with Bragg’s apple cider vinegar splashed in and my Cinnamon Apple tea with ACV as well. I’m not sure if the ACV is helping all that much, but it tastes good and I once knocked out an impending cold by drinking ACV with everything so it can hurt!

This cold is cramping my fragrance reviews though. I have so many perfumes stacked up that I’ve gotten requests to review - Jo Malone, Prada Candy plus a few of my own that I wanted to do. I’m hoping to get some filmed this weekend. I have lots of thoughts on the Jo Malone ones (gets ready to hide under the couch). I got four Jo Malone perfume samples, but I’ll start with the Peony & Blush Suede one since that one seemed to be talked about most.


I have a lot of articles planned that I hope to get to this week. I want to do a review of this dust mop I got. I know that doesn’t sound exciting, but I swear to you, this dust mop is amazing! It has changed my cleaning life. If you have wood floors, you NEED this mop.

I also have been scheming what to do with my two now decluttered bedrooms. I really think the big one is going to end up being Radiantly Amy headquarters. I’m going to clear off the shelves and put my nailpolishes, fragrances, maybe even purses and shoes up in the shelves and make it like a giant dressing room. I’ve been looking for fun vanities and chaise lounges for the space.

I like these mirrored vanities for the glam factor and the Hollywood-style lighted mirror is a bonus.


I’d also love to do some clothing try-on or outfit type things. I’m in a bit of a rut with my work clothes. I tend to wear the same things every day - jeans, polo, sneakers - so maybe my goal will be to mix it up a bit. I tend to choose comfort over style at work so we’ll see how that goes!

Swatch Lustro Bracelet is my New Favorite Thing

My girlfriend and I stopped into the Swatch store in Times Square for old times sake. We both had been proud owners of Swatches in the 80s/90s. I reminisced about my favorite - a pink, scented version while she waxed poetic about the rubber Swatch guards that kept the faces from getting scratched.

Swatch still has some pretty cool watches. A kiwi one caught my eye as did several rainbow variations. My girlfriend was partial to the banana one. They have a thing now where you can add little add-ons to your watch to make it customized. They seem to have veered away from the old rubber watches of our youth a bit, but what really caught my eye was the jewelry. They had a small section of rings, bracelets, and necklaces and I was a bit smitten with the bracelet. The sales clerk must have caught me staring longingly at the bracelet because she pulled it out of the case and brought it to me. As soon as I tried it on, I had to have it! Treat yoself is unfortunately my too frequent motto.

But I adore my new Lustro bracelet. I had to train myself to take it on and off by myself (lest I be trapped in my bracelet and unable to ever remove it without assistance). I spent a good 15 minutes practicing until I mastered the technique! I’ll still think fondly of my scented Swatch, but the bracelet is my new fave.

My Go-To Remedy For A Sore Throat Plus An Article For Thought


I came home from my New York City trip with an unwanted souvenir - a cold! I had a sore throat yesterday and knew I was in for trouble. My go-to remedy for a sore throat lately is Bragg’s Apple Cider Vinegar in Celestial Seasonings Cinnamon Apple Spice herbal tea. I drank that as soon as I felt the sore throat coming on and it knocked it out in a few hours. I unfortunately am stuck with this cold, but I’ve been alternating between sleeping and soup. I’ve had so much soup in the past 24 hours, I feel like I’m going to explode. I’m hoping this cold moves on quickly because I’ve got things to do!

I’ve been lazing around the house, mostly sleeping, but during one of my soup sessions, I came across this article about a writer who thinks it might be time to cut off her Trump loving in-laws out of her kids’ lives. I don’t have children, but it hit close to home, as I have 2 relatives that support Trump. One relative I cut off years ago, before Trump even, but for similar reasons - really nasty political discourse on Facebook. The other relative is not as easy to cut off and it’s so baffling to me how they can just be “ok” with Trump. This relative was very vocal about the “new math” being taught in her sons’ schools, but seems silent on issues like the mass shootings, conditions in the immigration detention centers, or Trump telling US citizens to “go back to your country” - things that in the grand scheme of things seem more important than a different way of doing math.

It’s just disheartening watching this all go down. There’s a side of me that says “everyone can believe what they want to believe” and then the other side that says “how the F can you be okay with this?” I grew up with a stepgrandfather who used to use every negative slang term for every nationality in front of us and he seemed pretty equal opportunity in his rants - no group was spared - least of all the Irish and the Catholics (both of which me and my father were at the time). When my stepsister and I got mooned by some boys down by the beach, he grumbled, “Those damn Catholic boys!” despite not even knowing who the boys were. To him, the hoodlums were “those Catholic boys” - that apparently was his profiling of the incident. It seems sort of quaint in comparison to the discourse today. As I don’t have kids, I don’t have to worry about shielding them from rants like you see today or even ones like my stepgrandfather used to go on. But I do worry about my nieces and nephews, my friends’ children…because they grow up to be adults and while some grow up fine, others don’t as we are seeing in all too familiar headlines.

I’m hoping for a speedy recovery from this cold because too much time at home reading the news is bad for my health!

I just had my carpet in all my bedrooms replaced with laminate wood flooring and I’m so happy to be free of carpet. Wall-to-wall carpet was once seen as the height of luxury, but these days, most people prefer the ease and look of wood flooring. Carpet is definitely friendly on the feet, but with active families or multiple pets, carpet is a nightmare.





I was #blessed with all white carpeting in the house I bought back in 2005. The previous owner, a single woman with no kids or pets, had kept it in a pristine condition with those clear plastic runners all over the place. Yeah, that didn’t last. I replaced the carpeting in the main areas of the house years ago, but unable to afford to do the rest of the house, I put the bedrooms off for later.





As the years passed my carpets got more and more disgusting. At my peak, I had 5 cats and dog. I went through multiple vacuums - both standard and carpet cleaning. One of my cats has a sensitive system, which meant cat pukes were a frequent nuisance. When I was down to 2 cats, I downsized the number of litter boxes, and oh boy, Lou the Cat was not happy about it. Lou the Cat can be an asshole. He’s usually a sweet boy, but he was leaving almost daily “presents” in one of the rooms. I’d had enough!





The installers took all day since it was a big job, but it looks great and this is going to be so much easier to take care of! I highly recommend making the switch if you can afford it or have the skills to do it yourself.
